Round or slightly elongated in shape, the Red Spring Onion has a sweet taste and a delicate, less pungent aroma than white or golden onions. It has remarkable nutritional properties, being rich in potassium, magnesium, vitamin A, and, most importantly, iron. This onion is highly versatile in cooking and can add a particularly aromatic touch to many dishes. It can be eaten raw (thinly sliced with just oil, salt, and pepper), added to mixed and potato salads, roasted in the oven, or used as the main ingredient in savory pies (torte salate) and focaccia bread. It is available from December to June.
